Though the capital of Italy may be described as romantic, it is really the island of Sicily that merits the title just as much, or more. Through its tenacious light, we observe a land of contrasts, conflicts and conquests, dramatic landscapes and a rich archaeological heritage. In a historical tug of war between external domination and sovereignty, various powers left their palpable influence on their territory. Journey Itinerary

Day 1: Pick Up in Catania

Guests will be picked up in Catania and transferred into a breathtaking boutique hotel, a former monastery, near mount Etna. After check in and time to relax, we will drop by a village famous for its centuries-long production of Sicily’s “green gold” - pistachios. Later on, we will meet an amazingly dedicated natural winemaker and visit a few organic local wineries. In the evening, we will enjoy dinner in a lovely restaurant renowned for its delectable seafood and for a real treat of the day - watch an opera in Catania.

Day 2: Bike Ride or Hike to Explore Mount Etna

We will start the day with breakfast a bike ride or hike to explore Mount Etna and, after a leisurely afternoon, will enjoy dinner at a Michelin star restaurant.

Day 3: Transfer to Noto

Transfer to Noto and check into a renowned historic hotel that is sure to inspire awe. We will have the rest of the day to explore this stunning baroque city.

Day 4: Explore the Seaside Village of Marzamemi

We will start the day right with the breakfast of champions, Noto style, and take the rest of the day to explore the seaside village of Marzamemi and enjoy a local beach with a picnic at a nature reserve. In the evening, we will enjoy some music at a captivating local outdoor museum, and savor a delightful meal.

Day 5: Transfer to the UNESCO Hilltop City of Ragusa

We will transfer to the UNESCO hilltop city of Ragusa and later, take a cooking class at the oldest chocolate factory in Sicily. For lunch, we will devour arguably some of the best pizza on the island to be able to judge for ourselves. Later, we will check into our next chateau famous not only for its unforgettable style, but also its two Michelin star restaurant, which we will get to enjoy for dinner as well as meet its renowned chef.

Day 6: Transfer to Catania

Leisurely morning, transfer to Catania, end of tour.

Day 1: Pick Up in Palermo

UNCOVR will pick you up in Palermo at 9.30am and drive west along the coast to a beautiful medieval hilltop town to enjoy some stunning views of the island. We will then indulge in a pastry making course with a local pasticciere. We will enjoy some beach time in the afternoon and check into a gorgeous hotel where we will stay for two nights.

Day 2: Leisurely Coastal Bike Ride

After breakfast, we will do a leisurely coastal bike ride and meet a local organic winemaker for a traditional lunch. In the afternoon, we will be awed by an ancient archeological site and enjoy dinner at a local olive oil producing villa.

Day 3: Excursion into a 5-Million Year Old Salt Mine

In the morning, we will take a fascinating excursion into a 5-million year old salt mine, then transfer to our next gorgeous resort. We will have time in the afternoon to explore the historic Valley of the Temples, then admire the sunset from the white cliff of Scala dei Turchi. We will finish the day off with an unforgettable dinner at a Michelin-star restaurant.

Day 4: Tour a One-of-a-Kind Goat Cheese Factory

We will tour a one-of-a-kind goat cheese factory with a grand mission, enjoy lunch at a beautiful rustic winery, and later learn the history of chocolate in Modica. Our next amazing retreat will await our arrival in the afternoon and the restaurant we will visit for dinner is sure to awe our guests with delicious traditional cuisine.

Day 5: Walk Through an Ancient Necropolis

After breakfast, we will walk through an ancient necropolis that is a UNESCO World Heritage site and later explore the stunning baroque city of Noto. In the evening, we will enjoy some music at a captivating local outdoor museum, and savor a delightful meal.

Day 6: Explore the Seaside Village of Marzamemi

We will take the day to explore the seaside village of Marzamemi and enjoy a local beach day at a nature reserve should the weather allow.

Day 7: Beautiful Coastal Bike Ride

Starting with a beautiful coastal bike ride, we will make our way to the magnificent island of Ortigia for a stroll and lunch. In the afternoon, we will check into a boutique hotel, a former monastery, near mount Etna.

Day 8: Sicily’s “Green Gold”: Pistachios

We will first drop by a village famous for its centuries-long production of Sicily’s “green gold” - pistachios. Later on, we will meet an amazingly dedicated natural winemaker, visit a local wine producing estate, and for a real treat of the day - watch an opera in Catania and have dinner in a lovely restaurant renowned for its delectable seafood.

Day 9: Helicopter Ride or Paragliding

To end on a seriously and literally high note, guests will have an option to ride a helicopter or try paragliding. In the afternoon, transfer to Catania. End of tour.

Leisurely Retreats, “Zero-Kilometer” Lifestyle

Pack your bags for leisurely accommodations in Sicily, and you might never want to leave. When in Catania, visit the rural Monaci delle Terre Nere, a converted Medieval monastery sited at the foot of Mount Etna. Expect a working farm with organic, locally-sourced home-cooking, “zero-kilometer” cocktails and elegant, comfortable rooms on the “black lands” of Zafferana Etnea. In Syracuse, explore Noto, a Baroque jewel of a city where every crevice is worth a visit. When you are ready to retreat, take your leisure at one of the Seven Rooms Villadorata, a hotel in a palace that formerly belonged to an aristocratic family. Whether in Catania or in Syracuse, you may discover the desire to retreat to a Sicilian lifestyle, where the pace of life is slow and sensuous.

 
 

Vineyard Visits, Sights to Discover

No visit to Sicily is complete without trying some of its renowned wines, and the splendid landscapes surrounding the Tenuta Gorghi Tondi and Planeta Sciaranuova offer ideal settings for elaborate vineyard visits and tastings. To the North-West, at Mazara del Vallo, Gorghi Tondi is located within a World Wildlife Fund-protected natural reserve, where state-of-the-art tools are combined with artisanal knowledge to produce reds, whites and sparkling wines.  On the other side of the island, toward Etna, Planeta’s Sciaranuova location was built on a former lava flow, providing dramatic sights and theatrical experiences. Both wineries respect their surroundings, their structures carefully integrated into their environments.

 
 

Artisanal Traditions: Modica’s Gianpaolo Ruta of Antica Dolceria Bonaiuto

Nobody knows confectionary like Gianpaolo Ruta, the sixth-generation manager of the Antica Dolceria Bonaiuto in Modica, the oldest chocolate factory in Modica. Ask Gianpaolo about the history of chocolate in Sicily, the Baroque architectural style that makes up Val di Noto, or the origin of the phrase regnum in regno, and you may find yourself engrossed in conversation for hours. As comfortable talking about history and architecture as he is about his hometown’s famous biscuit, jazz music and celebrated literature, Gianpaolo reads Modica like a text, acutely bringing out the minutest details that even the most prepared tourist might miss.
